摘要 <P>PROBLEM TO BE SOLVED: To provide unbaked cheese cake enhanced in smooth feeling and rich feeling of unbaked cheese cake and having excellent palate feeling and storage stability: and to provide a method for producing the unbaked cheese cake. <P>SOLUTION: The method for producing unbaked cheese cake comprises: adding oxidized starch and/or acid-treated starch which has the peak viscosity of &le;3,200 cp and the final viscosity of &le;2,100 cP when measuring the viscosity of 20 mass% aqueous suspension of the oxidized starch and/or acid-treated starch with an RVA (Rapid Visco Analyzer), to raw materials for unbaked cheese cake, so as to produce unbaked cheese cake enhanced in smooth feeling and rich feeling of unbaked cheese cake. The unbaked cheese cake has natural palate feeling, is also enhanced in smooth feeling and rich feeling of unbaked cheese cake, has fine palate feeling, causes no quality deterioration due to heat treatment during production of the unbaked cheese cake, and is excellent in storage stability. <P>COPYRIGHT: (C)2012,JPO&INPIT
