A topping composition having improved churn tolerance and whippability comprised a dried powdered emulsion of a fat and a mixture of emulsifiers comprising a partial ester of a glycol and palmitic acid with or without a minor amount of a partial ester of a glycol and another saturated fatty acid, and not more than 30% wt. of the emulsifiers of a glycerol monoester of a saturated higher fatty acid having at least 18 carbon atoms, in a matrix of hydrophilic encapsulating solids. Suitable esters include propylene glycol monopalmitate and monostearate, and glycerol monostearate, monobetrenate, and monoarachidate. In an example the fat is hydrogenated cotonseed oil, and the solids comprise sodium casinate, hydroxylated keithin, and sugar. |
