The invention relates to a method of extracting organic substances from coral, consisting in treating the coral with a fluid or a mixture of fluids in the supercritical state, without altering the crystalline structure of said coral, at a temperature of less than 270 ~C and at a pressure much greater than the critical pressure of the fluid or mixture of fluids, for example, of the order of at least three times or, preferably, at least five times greater than said critical pressure. The invention also relates to the coral obtained using said method and to bone substitutes produced therefrom.
