<P>PROBLEM TO BE SOLVED: To provide a concentrated coffee composition which contains chlorogenic acid compounds at high concentration and has good flavor. <P>SOLUTION: The concentrated coffee composition includes following components (A) and (B), and has a dried solid content of 10-100 mass%: (A) chlorogenic acid compounds in an amount of 100-300 mg/g in terms of the dried solid content; and (B) 5-hydroxymethylfurfural in an amount of 0.33 mg/g or less in terms of the dried solid content. <P>COPYRIGHT: (C)2012,JPO&INPIT |
