<P>PROBLEM TO BE SOLVED: To provide bubble-containing processed food as bubble-containing processed food like highly bulkily bubbled meringue, excellent in both stability of bubbles and melting feeling in the mouth, and allowing refrigeration circulation. <P>SOLUTION: The bubble-containing processed food includes albumen, whey and thickening polysaccharides, and has 0.3-0.7 specific gravity, and 10-90 Pa s viscosity (20°C).
