PURPOSE: A soluble extract of Hemicentrotus pulcherrimus shell powder with blood glucose reducing ability is provided to be used in pharmaceutical and food compositions. CONSTITUTION: A composition with a blood glucose reducing ability contains soluble extract of Hemicentrotus pulcherrimus shell powder as an active ingredient. A method for preparing the soluble extract comprises: a step of preparing Hemicentrotus pulcherrimus powder o 10-30 meshes; a step of adding 10 times weight of distilled water to the Hemicentrotus pulcherrimus powder; performing reflux-cooling at 100°C for three hours; a step of filtering the extract; a step of concentrating the extract at 40°C and 50-60°Brix; and freeze-drying.
