PURPOSE: A producing method of potable dried soy sauce powder is provided to mix soy sauce with agar powder, and heating to obtain the powder. CONSTITUTION: A producing method of potable dried soy sauce powder comprises the following steps: mixing agar powder and soy sauce in a fixed weight ratio, and boiling and stirring the mixture; heating the mixture for 5-10 minutes when it starts to boil; spreading the mixture on a wide plate into the thickness of 5-30mm, and cooling the mixture at 0-30 deg C for hardening; cutting the hardened gel into the constant size and various shapes; inserting the cut soy sauce pieces into a frame of a drier; and pre-freezing the frame, and freeze-drying the soy sauce pieces until the water content of the soy sauce pieces is 1-5%.
