PURPOSE: An operation system of a chilled meat slicer is provided to make cutting operation more convenient and safe. CONSTITUTION: An operation system of a chilled meat slicer comprises: a select switch(9) which is selectively manipulated in a continuous cutting mode; and a foot switch(10) which is operated by foot in the state that the mode of the select switch is selected. The select switch is converted into a continuous cutting mode in order to cut chilled meat consecutively.
