摘要 PURPOSE: Yogurt containing nano-chitoic acid, and a producing method thereof are provided to offer the excellent anti-yeast effect and antibacterial effect of the nano-chitoic acid. CONSTITUTION: A producing method of yogurt containing nano-chitoic acid comprises the following steps: adding 3~4wt% of skimmed milk powder and 0.1~0.3wt% of pectin into milk without cholesterol, and homogenizing to obtain homogenized milk; sterilizing and cooling the homogenized milk, inserting a starter culture, and fermenting to obtain the yogurt; and adding 0.1~10wt% of nano-chitoic acid into the yogurt. The size of the nano-chitoic acid is 100~1,000nm.
