PURPOSE: Red ginseng processed food, and a producing method thereof are provided to prevent the red ginseng processed food from decomposing or being contained by microorganisms. CONSTITUTION: A producing method red ginseng processed food comprises the following: slicing fresh ginseng, or pulverizing red ginseng; soaking the ginseng slices in sugar to obtain the red ginseng, or soaking the red ginseng powder in the sugar to obtain pills; drying the red ginseng slices or the red ginseng pills, and coating the surface of the red ginseng slices or pills; and coating the red ginseng slices or pills with a flavoring agent. The sugar-soaking process is performed by using a mixture containing honey, oligosaccharide, fructose, or maple syrup. The coating process uses a mixture containing cacao powder, vitamin C, calcium, amino acid, or xylitol.
