[Problem] To provide a process for converting a biomass, which is a plant body, into ethanol with high efficiency in a simple manner. [Solution] A process for producing bioethanol, comprising carrying out an alkali treatment by immersing a cellulose-containing plant body in an aqueous caustic potash or caustic soda solution having a pH value of 12 or more, immersing the alkali-treated plant body in an aqueous citric acid solution having a pH value of 1 to 5, heating the plant body to 90-140°C together with the aqueous citric acid solution, adding caustic potash or caustic soda to the aqueous citric acid solution in which the plant body has been immersed to adjust the pH value of the aqueous citric acid solution at a value of greater than 5 and not greater than 7.5, adding Japanese radish to the pH-adjusted aqueous solution, fermenting the resulting solution, and extracting ethanol from the fermented aqueous solution. |
