PREPARATION METHOD OF TURANOSE USING AMYLOSUCRASE AND SWEETNER USING TURANOSE

PURPOSE: A method for producing turanose using amylosucrase is provided to easily produce turanose of high purity from a substrate such as sucrose. CONSTITUTION: A method for producing turanose comprises: a step of reacting amylosucrase in a sucrose solution at 30-40°C and 6.5-7.5 to produce turanose; and a step of purifying the reactant by ion-exchange column chromatraphy, or column chromatography by activated charcoal or silicagel. The amylosucrase is derived from microorganism of Neisseria polysaccharea, Deinococcus geothermalis or Alteromonas macleodii. The sucrose solution additionally contains fructose. A sweetener contains the turanose.
