A method of styling hair comprising the following steps: i) using a crystalline organic material or mixtures thereof to manufacture a hair care composition; wherein the crystalline organic material or mixtures thereof have an intrinsic property of taking up water at 25°C and 70%RH of at least 10 wt% of its total weight at 0.1 % RH iii) applying said hair composition to the hair.
