PURPOSE: A method for making adlay fermentation liquor is provided to enhance sprit degree and to enhance saccharification of adlay fruits. CONSTITUTION: A method for making adlay fermentation liquid comprises: a step of pretreating a mixture of adlay and white rice; a step of adding 200 weight parts of water to 100 weight parts of adlay and dipping; a step of grinding the dehydrated adlay; a step of mixing 100 weight parts of adlay and 150-450 weight parts of white rice and steaming; a step of adding nuruk and yeast to the mixture of steamed adlay and white rice and fermenting for 7-10 days to prepare ferment; and a step of pressing the ferment to remove residual rice-wine filter cake and filtering to prepare fermentation liquor. |
