摘要 PURPOSE: A drying method of whole bulbs of garlic capable of preventing the virescent phenomenon is provided to remove a process of peeling the skin of the garlic. CONSTITUTION: A drying method of whole bulbs of garlic comprises the following steps: collecting the garlic, and naturally drying; hot-air drying the dried garlic at 46-52 deg C for 40-50 hours for maintaining the water content of the garlic skin into 25-30%; peeling the skin from the garlic, and washing the garlic; grinding the washed garlic using a grinder into 100-200 meshes; and inserting the ground garlic into a container, and steaming at 85-95 deg C for sterilizing for 2-3 minutes.
