PURPOSE: A yeast culture solution for baking using a temperature sterilizing method is provided to inject dried yeast to a sterilized liquid medium for culturing the yeast for making bread dough. CONSTITUTION: A bread producing method using a yeast culture solution comprises the following steps: boiling a solution of a microorganism basal medium in a cylindrical stainless steel container for 20-30 minutes; injecting dry yeast into the solution after cooling; culturing the yeast at 15-30 deg C for 24-120 hours by supplying sterilized air using an air filter; mixing the obtained yeast culture solution with commercial dry yeast and strong powder, and kneading the mixture; firstly fermenting the dough at 30-35 deg C for 50-55 minutes, and dividing; secondly fermenting the divided dough for 15 minutes, and molding; and thirdly fermenting the molded product for 40-50 minutes before baking the dough in an oven at 180-190 deg C. |
