PURPOSE: Instant rice noodles using yacon and a hovenia dulcis extract, and a producing method thereof are provided to remove the mushy texture of conventional rice noodles. CONSTITUTION: A producing method of instant rice noodles comprises the following steps: mixing and grinding 100parts of rice powder by weight, 20parts of soybean powder by weight, and 1~3parts of refined salt by weight; adding yacon and a hovenia dulcis extract heat-mixed at 80~100deg C to the mixture, and kneading; molding the obtained dough using a noodle making machine; freeze-drying the molded noodles at 5~10deg C; and packing the freeze-dried noodles with soup. |
