摘要 PURPOSE: A producing method of rice ice cream using water soluble rice powder is provided to produce the ice cream without using skimmed milk powder, dried whole milk, milk cream, or a stabilizer. CONSTITUTION: A producing method of rice ice cream using water soluble rice powder comprises the following steps: crushing polished rice into the average particle diameter smaller than 50 micrometers; heating the rice powder using steam at 80 deg C; adding purified water into the rice powder, and firstly enzyme-reacting the rice powder using mesophilic alpha-amylase having the activation temperature at 50-60 deg C; secondly enzyme-reacting the rice powder using diastatic enzyme, and spray-drying to obtain a mixture; sterilizing and aging the mixture; and freezing the mixture inside an ice cream maker before molding the mixture into the ice cream.
