PURPOSE: New protein and a producing method thereof are provided to enhance the immunity for influenza viruses by adding red ginseng and dried tangerine peel. CONSTITUTION: A producing method of new protein comprises the following steps: boiling and cooling soybeans, and inserting the soybeans into a fermentation chamber to ferment the soybeans for 48hours; cooling the fermented soybeans at 10deg C; adding 5~10wt% of red ginseng powder into the soybeans; injecting bacillus subtilis to the mixture, and fermenting for 25hours; drying the fermented product inside a drying chamber at 55~60deg C; crushing the dried product into powder; mixing the fermented product powder with dried tangerine peel powder in a ratio of 25:75; fermenting the mixture for 18hours at 38~45deg C; heat processing the fermented mixture for 4hours at 68~72deg C; and secondly heat-processing the mixture for 6hours at 80deg C.
