<P>PROBLEM TO BE SOLVED: To provide a noodle product developing reduced acid taste and acid smell of acid-treated noodle, especially fresh-type instant noodle, free from disagreeable taste caused by using a neutralizing agent for reducing disadvantageous influence on noodle-making process and reducing acid taste and acid smell while suppressing the acid taste and acid smell, and giving simple and refreshing taste of soup in eating for a soup-type noodle product. <P>SOLUTION: There is provided the noodle product comprising a set of an acidic noodle containing cyclodextrin in noodle strings and separately assorted alkaline pH adjuster or a seasoning containing the pH adjuster. <P>COPYRIGHT: (C)2012,JPO&INPIT |
