FIELD: food industry. ^ SUBSTANCE: invention relates to food industry. The proposed method for cooling preserves in a metal cylindrical container after sterilisation involves a cooling process in a coolant flow. The coolant is represented by a humidified air flow at a rate of 2-5 m/s with finely dispersed moisture in an amount of 0.02-0.03 kg/kg of dry air. The metal container filled with the product is rotated round the longitudinal axis with a frequency equal to 1.83 s-1. ^ EFFECT: method allows to significantly reduce the process duration and water consumption. ^ 2 dwg
