FIELD: food industry. ^ SUBSTANCE: invention is related to preservation industry. After packing sugared pulpy juice with initial temperature equal to no less than 60C into jars one seals and heats the jars in an air flow at a temperature of 170C during 9 minutes at a rate of 4-5 m/s. Then one performs cooling in a humidified air flow with finely dispersed moisture at a temperature of 20C and at a rate of 4-5 m/s during 13.5 minutes. During the heating and cooling process the jars are rotated round the longitudinal axis with a frequency equal to 1.83 s-1. ^ EFFECT: method ensures reduction of the process duration (by 50%) and water consumption per unit of the sterilised products as well as allows to enhance the ready product quality. ^ 3 dwg, 3 ex
