<P>PROBLEM TO BE SOLVED: To provide a method for making noodles which solves the problem that it takes very long time to make handmade buckwheat noodles or Japanese wheat noodles because of having need for kneading or levigating a mixture of cereal flour and water and also need for rolling the mixture into the flat one, and a thickening material needs to be added to the mixture because use of the pure cereal flour causes breakage when rolling the mixture, so as to make the noodles with only pure cereal flour without having no need for such kneading or levigating, and rolling. <P>SOLUTION: The method for making the noodles includes: putting a slurry-like noodle material obtained by mixing the cereal flour with water at a ratio close to that of finished noodles into a steamer; steaming the noodle material with steam generated in the steamer from above and below to harden the noodle material into plate-like noodles; and cutting the plate-like noodles in an appropriate width to make the noodles. <P>COPYRIGHT: (C)2012,JPO&INPIT |
