<P>PROBLEM TO BE SOLVED: To provide a soft candy modifier for obtaining soft candy which is free from ooze of oil while containing a large amount of oil, suppressed in stickiness to teeth, and excellent in softness of chewing, and smoothness of feeling on the tongue, and to provide the soft candy produced by using the soft candy modifier. <P>SOLUTION: This soft candy modifier including polyglyceryl fatty acid ester as an active ingredient is such that the average polymerization degree of polyglycerol constituting the polyglyceryl fatty acid ester is not less than 4, behenic acid not less than 20 wt.% is contained as the essential ingredient in the constituent fatty acid, and 10-40 wt.% of fatty acid is esterified to polyglycerol. <P>COPYRIGHT: (C)2012,JPO&INPIT |
