<P>PROBLEM TO BE SOLVED: To provide a jelly-like food capable of being easily taken out of a container and having an excellent texture while containing non-polymerized catechins and a gelling agent at high concentrations. <P>SOLUTION: The jelly-like food contains: (A) 0.1-0.5 mass% of non-polymerized catechins; (B) at least 0.005 mass% of at least one kind of flavonol glycosides expressed by the following general formula (1); and (C) the gelling agent. In the formula, R<SP POS="POST">1</SP>-R<SP POS="POST">7</SP>independently express hydrogen atom, etc.; R<SP POS="POST">a</SP>expresses a β-glucosyl group, etc.; R<SP POS="POST">b</SP>expresses an α-rhamnosyl group, etc.; R<SP POS="POST">c</SP>expresses an α-glucosyl group, and n expresses an integer of 0-10. <P>COPYRIGHT: (C)2012,JPO&INPIT |
