<P>PROBLEM TO BE SOLVED: To provide a bulky-whipped meringue-like bubble-containing food product which is excellent in both stability and mouth-melt feeling of bubbles, and distributable as freezing. <P>SOLUTION: The bubble-containing processed food with a specific gravity of 0.3-0.7 and a viscosity (20°C) of 10-90 Pa is manufactured by whipping slurry that contains albumen, milk serum, and a polysaccharide thickener, and heating it at 75-85°C for 0.5-5 minutes. <P>COPYRIGHT: (C)2012,JPO&INPIT |
