FIELD: food industry. ^ SUBSTANCE: invention relates to fish industry. The method involves preparation of caviar, heat treatment, salting and pre-drying in drying-and- airing chambers with forced convection at a temperature of no more than 75C. During the whole period of pre-drying the caviar is stirred every 15-20 minutes. The pre-drying process is performed till moisture weight content in the caviar is 36 - 40%. The pre-dried caviar is placed into a sieve gas pouch and pressed till separation of protein-fat emulsion. ^ EFFECT: invention allows to produce pressed caviar with high quality properties and microbiological stability in the process of storage. ^ 3 cl, 3 ex |
