Ice is formed by spraying water on to a cooled member to form a frozen mass which is forced off the member as a unit by reciprocating harvesting means. As shown diagrammatically in Fig. 1, water is passed by a pump 18 from a reservoir 16 to a spray header 13 from which it is sprayed through nozzles 22 on to the interior surface of a cooled cylinder 11 having a refrigerant jacket 17. The ice 23 so formed is removed by a member 14 which is reciprocated by a fluid actuator 15 having a piston 28 and rod 29. A four-way valve 26 is energized by a timer 36 to pass water under pressure through a line 27 to the actuator 15 to force the member 14 upwardly to remove the ice 23 which is forced between the frusto-conical face 30 of the header 13 and cutter blades 31 arranged around the upper periphery of the cylinder 11. The timer 36 is also arranged to cause the refrigeration system 18a to supply hot refrigerant to the jacket 17 during harvesting. Valve 26 is subsequently operated to admit pressurized water to a line 32 so forcing piston 28 and member 14 downwardly, the water from the low pressure side of the piston being supplied through a line 33 to the reservoir 16 during each stroke of the piston. The member 14 is provided with apertures 24 for excess water and entrained solid particles which are returned to the reservoir 16 through a pipe 25. The amount of water supplied to the actuator 15 and hence to the reservoir 16 is preferably slightly in excess of that supplied by the pump 18 to the freezing cylinder 11 during each freezing operation so that solid particles are swept under a partition 35 in the reservoir and are removed through an overflow pipe 34. The constructional details of the apparatus are illustrated in Figs. 2-7 (not shown). In the embodiment shown in Fig. 8, the freezing cylinder 38 has longitudinal fins 41 and is cooled by a coil 39 of elliptical cross-section. The water is sprayed on to the walls of the cylinder through an inclined nozzle 96 which is rotated by a motor 98 through gearing 97. The cutting blades 73 are arranged in staggered relationship with further blades 84 on the head structure 85 carrying the spraying nozzle and a resilient annular member 87 is secured to the structure 85 to act as a check valve for the ejected ice and to prevent impurities from entering the cylinder.
