PURPOSE: Ligularia fischeri kimchi containing deep sea water, and a producing method thereof are provided to improve the storage property, the palatability, and the hygienic property of the kimchi. CONSTITUTION: A producing method of ligularia fischeri kimchi containing deep sea water comprises the following steps: collecting the deep sea water, and concentrating into the salinity of 7-13%; dressing Chinese cabbage, and cutting into 2-4 parts; salting the cut Chinese cabbage with the deep sea water for 2-6 hours; washing the salted Chinese cabbage, and removing the mixture; finely slicing ligularia fischeri leaves, and preparing kimchi seasonings with the ligularia fischeri leaves; mixing 100 parts of salted Chinese cabbage by weight with the kimchi seasonings containing 10-15 parts of ligularia fischeri leaves by weight; and fermenting the mixture for 2-3 months at room temperature. |
