摘要 PURPOSE: Bamboo soy sauce, and a producing method thereof are provided to dip bamboo into traditional soy sauce for offering mineral components and pharmacological compounds of the bamboo to the soy sauce. CONSTITUTION: A producing method of bamboo soy sauce comprises the following steps: boiling soybean, and removing the moisture before crushing and molding into soybean blocks(S100); drying the surface of the soybean blocks, and fermenting the blocks in a yellow soil room(S200); inserting 100 parts of fermented soybean blocks by weight, and 15-25 parts of 15-25% bamboo salt water by weight into a pottery jar, and adding charcoal, red pepper, and jujube before sealing the jar for aging and fermenting(S300); filtering the obtained raw soy sauce, and removing soy sauce cake to obtain the soy sauce(S400); inserting the soy sauce into the jar, and dipping bamboo into the soy sauce before aging the mixture for 6-12 months(S500); and filtering and sterilizing the aged bamboo soy sauce(S600).
