Provided is a method for maintaining cutting quality, which ensures the maintenance of the hardness of a worked surface at a predetermined value or lower even when any disturbance occurs during cutting work. The method comprises: a date acquisition step of acquiring, as a desired cutting resistance, a cutting resistance of a working tool (7) in cutting work that is carried out so as to maintain the surface hardness at a level lower than a predetermined hardness by controlling the working conditions properly; and a cutting work step of detecting the cutting resistance of the working tool (7) during the cutting work and conducting the cutting work while controlling the detected cutting resistance so as to become lower than the desired cutting resistance.
