A solid slab of ice cream frozen to below -10‹F. is dehydrated by heating under a pressure of less than 1.5mm Hg abs. to a moisture content of less than 4%, the rate of heating being such that no thawing occurs. The dhydrated product preserves the shape and cellular structure of the initial slab, and may be powdered for reconstitution to ice cream, or it may be coated, for example with chocolate or caramel and chocolate, to form a candy. |
