FIELD: food industry. ^ SUBSTANCE: invention relates to food industry. According to the proposed method the fruits are preliminary prepared and packed in jars, then they are poured with 60C water for 2-3 minutes, repeatedly poured with 85C water for 2-3 minutes, then the water is replaced with a 98C syrup. The jar is sealed, put into the carrier and undergoes showering with 85-90C water during 3 minutes and heating in 100C water during 15-20 minutes with subsequent three-stage cooling in 80, 60C and 40C water during 5, 5 and 10 minutes respectively. ^ EFFECT: preserved compotes produced according to the proposed method contain a rich complex of mineral, aroma and pectin substances, organic acids and vitamins as well as a large quantity of biologically active natural fruit components. ^ 1 ex |
