摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to food industry. The jars filled with compote are put into the carrier providing for their air-tightness. Then one performs preliminary heating of the jars with compote in 50C water during 5 minutes with subsequent transfer into 70C water for 5 minutes, into 85C water for 5 minutes and then into 100C water for 35 minutes. Then one performs cooling of the jar in 80C water for 10 minutes, then - in baths with 60C and 40C water for 10 and 10 minutes respectively. ^ EFFECT: invention allows to reduce thermal treatment duration and decrease treatment non-uniformity. ^ 1 ex
