PURPOSE: A producing method of rice dough for pizza is provided to offer the rice dough to eaters having sensitivity for flour or the smell of flour by excellent digestion efficiency. CONSTITUTION: A producing method of rice dough for pizza comprises the following steps: hydrating washed rice, and drying the rice after crushing; adding additives into the dried rice powder to obtain mixed rice powder; mixing 1,000 parts of mixed rice powder by weight, 90-110 parts of bread improver by weight, 550-500 parts of water by weight, 14-16 parts of dried whole milk by weight, 9-11 parts of oil by weight, and 50-60 parts of pizza dough palm by weight; and fermenting the mixture at 38-41 deg C for 60-80 minutes. The additives include gluten, hydroxypropyl starch phosphate, powdered sugar, skimmed milk powder, distarch phosphate, and hydrous crystalline glucose. |
