PURPOSE: A producing method of fried Chinese yam slices is provided to improve the nutrition of the fried Chinese yam slices by frying Chinese yam slices and roasting additional ingredients. CONSTITUTION: A producing method of fried Chinese yam slices comprises the following steps: washing Chinese yam with clean water for 1-3 times, and slicing the Chinese yam into the thickness of 10-20mm and the length of 30-120mm before removing the moisture(100); mixing 70-80wt %of Chinese yam slices, 2-5wt% of salt, 2-5wt% of chicken powder, and 10-25wt% of yellow liquor, and kneading the mixture with frying powder and eggs(200); frying the Chinese yam slices using 60-80 deg C oil(300); parboiling ham, celery, corn, and minced pepper using 70-100 deg C water, removing the moisture from the parboiled ingredients, and mixing with the finely sliced fresh Chinese yam to obtain an additional ingredient mixture(400); roasting the additional ingredient mixture with the salt and the chicken powder in a roasting pan(500); and mixing the fried Chinese yam slices and the roasted additional ingredients in a dish(600). |
