PURPOSE: A producing method of fermented persimmon liquid using the persimmon skin is provided to increase the sugar content in the liquid by adding a glycolytic enzyme to the persimmon skin. CONSTITUTION: A producing method of fermented persimmon liquid using the persimmon skin comprises the following steps: grinding the dried persimmon skin, and assorting the obtained powder; adding distilled water to the powder, and processing the mixture with a glycolytic enzyme; and alcohol-fermenting the glycolytic enzyme-treated liquid having the sweetness of 10-15%, and acetic acid fermenting. The glycolytic enzyme is selected from cellulase, hemicellulase, pectinase, or beta-glucosidase.
