摘要 PURPOSE: Bread containing barley leaf tea powder and a producing method thereof are provided to offer the biological activity regulation ability of the barley leaf tea powder. CONSTITUTION: A producing method of bread containing barley leaf tea powder comprises the following steps; mixing 100parts of flour by weight, 1.5~6parts of barley leaf tea powder by weight, 62~68parts of water by weight, 4.9~5.5parts of shortening by weight, 1.8~2.3parts of yeast by weight, 1.5~2parts of salt, 2.8~3.5parts of milk powder by weight, and 6~6.5parts of sugar by weight to obtain dough; adding more shortening to the dough, and secondly mixing; fermenting the dough for 55~65minutes; dividing the dough into 100~150g lumps, and secondly fermenting; degassing and inserting into a frame before fermenting again; and baking inside an oven for 15~30minutes at 180~220deg C.
