PURPOSE: A disk-shaped centrifuge capable of selecting a three phase or four phase separation mode is provided to effectively extract special components from animal fat, food diluted oil, or fish oil. CONSTITUTION: A disk-shaped centrifuge capable of selecting a three phase or four phase separation mode comprises the following: a vertical rotary shaft(4) including an oil guiding groove(17) and an undiluted solution flow path(4A); an undiluted solution inlet pipe(16) for supplying an undiluted solution into the undiluted solution flow path; an undiluted solution tube(24) in a cone shape for penetrating the vertical rotary shaft; a partition film pilot(6) penetrated by a light liquid outlet pipe(23A) and a heavy liquid outlet pipe(14A); a rotation bowl(7) forming layers using the undiluted solution; disks(8) laminated inside the rotation bowl; an upper disk hood(9) guiding oil to the lower side, and water to the upper side; a water chamber(10) guiding the oil to the oil guiding groove, and discharging the water to the upper side; and a siphon(12A) including a water outlet pipe(12).
