PURPOSE: A producing method of food with the reduced concentration of acrylamide is provided to spray an aqueous solution containing arginine to the food before heating to reduce the concentration of the acrylamide. CONSTITUTION: A producing method of food with the reduced concentration of acrylamide comprises the following steps: peeling potatoes, and cutting; blanching the cut potatoes for 5~30minutes using 90~100deg C hot water; dehydrating the blanched potatoes, and pre-frying before freezing; spraying aqueous solution containing arginine to the pre-fried potatoes; and frying the potatoes with 150~180deg C oil for 3~4minutes.
