摘要 PURPOSE: A producing method of rice cake having improved storage property is provided to prevent the rice case from hardening during storage or distribution processes. CONSTITUTION: A producing method of rice cake having improved storage property comprises the following steps: mixing material rice with heat resistant beta-amylase and trehalose; and inserting the mixture into water before steaming and molding. The mixture includes 0.01-0.1wt% of heat resistant beta-amylase. The mixture includes 5-15wt% of trehalose.
