PURPOSE: A producing method of health functional dried jujube is provided to offer the crunchy texture and the excellent nutrition of the jujube to eaters. CONSTITUTION: A producing method of health functional dried jujube comprises the following steps: dipping dried jujube in a medical herb extract for 1-1.5 minutes; separating the jujube from the extract, and coating the jujube with medical herb powder; and drying the coated jujube with low temperature air at 45-50 deg C using a microwave drier. A medical herb for the medical extract is selected from red ginseng, schisandra chinensis, schisandra chinensis, chaenomeles sinensis, and ginger.
