PURPOSE: A producing method of a pork processed product containing aged fruit is provided to remove the unique smell of pork by aging the pork with apple and pear puree. CONSTITUTION: A producing method of a pork processed product containing aged fruit comprises the following steps: preparing 72-83wt% of pork, 5-15wt% of pear puree, 5-15wt% of apple puree, 1-4wt% of curing agent, 2-6wt% of sweetening agent, 1-8wt% of starch, and 0.1-2wt% of other seasoning ingredients; mixing the pork with the pear puree, the apple puree, the curing agent, and the sweetening agent for curing; aging the cured pork, and mixing the pork with the starch and the seasoning ingredients; and filling the mixture in a case before sterilizing and packaging. The curing agent is formed with refined salt, an acidity regulator, a cochineal coloring agent, and sodium nitrite. |
