<P>PROBLEM TO BE SOLVED: To provide a method for producing astaxanthin crystal having a high content of astaxanthin and a less content of foreign substances, from Phaffia yeast in a simple production process. <P>SOLUTION: The method for producing astaxanthin crystal includes: a step of extracting dried fungus of Phaffia yeast as acetone; a step of condensing the extract so that the astaxanthin concentration of the extract becomes 1.5-3 mass%; and a step of crystalizing astaxanthin by bringing the condensed liquid and n-hexane of 0.3-0.8 times the mass of the dried fungus into contact. <P>COPYRIGHT: (C)2012,JPO&INPIT |
