<P>PROBLEM TO BE SOLVED: To provide a bakery product having a soft and moist texture, capable of smoothly dissolving in the mouth, and having an excellent flavor and a sense of volume; and a method for producing the same. <P>SOLUTION: The bakery product, to which softness, moistness and a property of smoothly dissolving in the mouth are imparted, is produced by using raw material flour obtained by blending rare-sugar-containing isomerized sugar or rare sugar in wheat flour as a main raw material in the production of the bakery product. <P>COPYRIGHT: (C)2012,JPO&INPIT |
