<P>PROBLEM TO BE SOLVED: To provide an ingestion-assisting oleaginous composition that is for persons having difficulty in swallowing/masticating and that can easily produce a food that persons having difficulty in swallowing/masticating easily consume and a food for persons having difficulty in swallowing/masticating using the same. <P>SOLUTION: There are provided: an ingestion-assisting oleaginous composition for persons having difficulty in swallowing/masticating, obtained by rapidly cooled mixing/kneading processing of a composition having an SFC of 3-18% in the range of 5-25°C and containing an oil and fat and an emulsifying agent having an HLB value of 1-10; the food for persons having difficulty in swallowing/masticating, comprising the ingestion-assisting oleaginous composition for persons having difficulty in swallowing/masticating and a shredded or pulverized edible food; and the method for producing the food for persons having difficulty in swallowing/masticating is mixing a shredded or pulverized edible food with the ingestion-assisting oleaginous composition that is for persons having difficulty in swallowing/masticating and that is obtained by rapidly cooled mixing/kneading processing of a composition having an SFC of 3-18% in the range of 5-25°C and containing an oil and fat and an emulsifying agent having an HLB value of 1-10. <P>COPYRIGHT: (C)2012,JPO&INPIT |
