PURPOSE: A frying machine using frying oil and water is provided to extend a waste oil cycle and to prevent cooking oil acidification by sinking food materials and crumbs to the bottom of a water layer. CONSTITUTION: A frying machine using frying oil and water comprises a container(1), a heater(2), first and second safe nets(3,4), an oil discharge tube(6), a water discharge tube(7), and a cooling plate(9). The heater is installed in the container. The first and second safety nets are installed inside the container and divide the container into upper and lower parts. The bottom of the container is filled with water, and the top is filled with cooking oil. The oil discharge tube is installed in the wall of the container where a frying oil and water separation layer is located. The water discharge tube is installed in the bottom of the container. The cooling plate is connected to a cooling device(8) and is installed in the outer wall of the container.
