摘要
PURPOSE: A method for manufacturing bacteriocin using a medium of Chinese cabbage juice is provided to use bacteriocin as a food additive. CONSTITUTION: A method for manufacturing bacteriocin using a medium of Chinese cabbage juice comprises: a step of mixing water and Chinese cabbage juice and pulverizing; a step of centrifuging and collecting Chinese cabbage juice; a step of sterilizing the collected juice; a step of inoculating 0.5-2 wt% of Lactobacillus to a juice medium and culturing at 20-40°C for 12-36 hours; a step of centrifuging the culture liquid and filtering to sterilize; and a step of freeze-drying.
