APPARATUS AND METHOD FOR SLICING VEGETABLES WITH IMPELLER TUBES ROTATABLE ABOUT LONGITUDINAL AXIS

A cutting apparatus (2) is disclosed for slicing potatoes comprising an impeller hub block (4) and a cutting assembly (12, 14). The impeller hub block (4) comprises a potato holding area and an opening (10) for receiving potatoes into the holding area. A plurality of impeller tubes (6) having a longitudinal length of between about 5 and 15 inches (12.7 and 38.1 cm) extend radially from the impeller hub block (4) each tube having an entry aperture and an exit aperture. The impeller tubes (6) are rotatable about a central vertical axis of the impeller hub block (4) and each impeller tube (6) is also rotatable about its own longitudinal axis. The cutting assembly (12, 14) circumferentially surrounds at least a portion of the impeller hub block (4). A method of cutting potatoes using such an apparatus is also disclosed.
