<P>PROBLEM TO BE SOLVED: To provide a device to produce coffee extract having a froth layer of uniform fine bubbles without greatly depending on pressure of the coffee extract supplied to an inlet. <P>SOLUTION: The device includes the inlet (2) to which the coffee extract is supplied, outlets (4.1, 4.2) to discharge the coffee extract having a froth layer of fine bubbles, and at least one liquid passage extended from the inlet to the outlets through which the coffee extract flows from the inlet to the outlet when in use. The liquid passage includes a liquid impact surface (12). The inlet includes a jet spray opening to generate jet spray of the coffee extract. As the coffee extract is supplied to the inlet in use, the jet spray of the coffee extract goes to the liquid impact surface, and the coffee extract having a froth layer of fine bubbles is produced.
